Snickerdoodles
1&3/4 Cups sugar
1 Cup butter or margarine, melted
2 eggs
2 & 3/4 Cups all-purpose flour
1 Teaspoon baking powder
1/4 Cup of sugar
1 Tablespoon cinnamon
Heat oven to375 Deg. Mix 1/4 cup sugar and the cinnamon; set aside. Beat 1 & 3/4 cups sugar, the butter and eggs in large bowl with electric rnixer on medium speed, or mix with spoon: Stir in flour, baking powder.
Put mix in fridge for 1 hour.
Shape dough into wallnut size balls. Roll in sugar-cinnamon mixture. Place about 2 inches apart on ungreased cookie sheet Bake 8 to 10 minutes or until centers are almost set. Remove from cookie sheet to wire rack.
Blueberry Buckle
1 Cup sugar
1/2 Cup butter
l Egg
1/2 Cup.. milk
2 Cup flour
2 Teaspoons baking powder
2 Cups fresh or frozen blueberries
Mix sugar, butter and egg. Stir in milk.
Add dry ingredients.
Carefully blend in blueberries
Spread in greased 13x9" pan.
Topping;
1/2 Cup sugar
1/3 Cup flour
2 Teaspoons cinnamon
1/4 Cup butter-cold
Mix dry ingredients. Cut in butter until crumbly.
Sprinkle over batter.
Bake In pre-heated 375 Deg. oven for 50 mins.
Butterscotch Walnut Cookies
2 1/4 Cups all-purpose flour
1 Teaspoon baking soda
1 Teaspoon salt
1 Cup butter, softened
3/4 Cup packed brown sugar
3/4 Cup granulated sugar
1 Teaspoon vanilla extract
2 Eggs
1 Cup Butterscotch chips
1 Cup chopped Walnuts
In a large bowl combine all Ingredients. Drop by rounded tablespoon onto ungreased baking sheets.
Bake at 375 Deg. for 9-11 minutes or until golden brown. Remove to wire racks to cool.
Easy Baked Beans
4 Slices of bacon
1 Medium onion
16 oz Can of B&M Baked beans
1 Tablespoons brown sugar
1 Teaspoon ketchup
1 Teaspoon of mustard
Fry bacon in medium fry pan
Remove bacon and sauté onion in beacon fat.
Add 16 oz can of baked beans, ketchup, brown sugar and mustard.
Breakup bacon and add to beans.
Heat and serve.
Biscuits and sausage gravy
8 buttermilk biscuits
3/4 pound of sausage (fatty sausage works best for this)
4 cups of milk
4-6 tablespoons of flour
Prepare biscuits as instructed on package. Brown sausage in skillet. As soon as sausage is completely brown, turn to medium heat. Add flour by the tablespoon, stirring constantly. Let the flour turn BROWN before adding another tablespoon (if you don't, your gravy will taste like flour). After you have added enough flour to make the gravy as thick as you like, add milk and stir with whisk.
Serve over biscuits.
Grilled Shrimp
Grilled Shrimp with a marinade of lemon juice, scallions , parsley, garlic and oil.
2 pounds jumbo shrimp
3/4 cup vegetable oil
2 to 3 Tbsp fresh lemon juice
1 bunch scallions, with a few inches of green, thinly sliced
2 teaspoon dried parsley
3 cloves garlic, finely minced
2 teaspoon dried basil
Place shrimp in a glass bowl. Stir remaining ingredients together; pour over shrimp. Cover and marinate for 3 to 4 hours. Grill over hot coals for about 5 to 7 minutes, turning halfway through the cooking time.
Serves 4 to 6.
Donnas Chicken Wings
5 lbs Chicken wings
12 oz Jar of apricot preserves
8 oz Bottle of Catalina salad dressing
1 Pk. Lipton onion soup mix
Mix together ( get the lumps out ) and coat the chicken.
Bake 1 hour @ 350 Deg.
Kielbasa in brown sugar
1 Double package of kielbasa, 2 links, cut into slices about ¼ inch thick.
1 lb Brown sugar
Place slices of kielbasa in a aluminum half-size steam table pan and cover with brown sugar. Cook @ 350 Deg. for 30 to 40 Mins stirring occasionally.
Baby Spinach Strawberry Salad
1 Bag baby spinach
1 PT. Strawberries – halved or quartered
Dressing
½ Cup sugar or splenda
¼ Cup apple cider vinegar
½ Cup olive oil
2 Tbs sesame seeds (optional) I use 1 Tbs
1 Tbs poppie seeds
1 ½ tea spoons chopped onion
¼ tea spoon Worcestershire sauce
Mix together and refrigerate for at least a ½ hour shake well and pour over spinach and strawberries – enjoy.
